Mämmi and how to make it

Post by monroepq » Sun Dec 18, 2005 1:08 am

A while ago I heard about this very strange porridge. Ignoring the fact that many say it's an acquired taste, and others say that it's a taste impossible to acquire, I set about making it. Unfortunately here in the US my first problem was finding rye flour. Luckily Wild Oats supplies this. However, where is one supposed to buy powdered rye malt? I've been to the main specialty stores, Trader Joe's and Wild Oats, as well as the chain grocery stores, but I still can't find this anywhere. Has anyone living in the US managed to make this?

Rye malts may be available at some brewing supply shops, but it's more likely to be whole rye grains, or partially cracked. Don't know how mämmi is made so I don't know what 'powered' malt is.

Mämmi malts are "light" malts. And to powder them you just needs to grind them down then.

If I am not mistaken this mämmi thing was mentioned in a Bettina's interview with Conan O'Brien. She didn't say how it's made but it was funny

Mämmi is traditionally eaten at Easter time.

I find it yummy with cream and sugar.

I don't have a clue about how to make it. My grandmother would have, though.

I once drank in Sheffield what was said to be the strongest beer, and it tasted more or less like mämmi. Not that that really helps, but think a thick porridge made of malts and baked in the oven, and you're about there. Looks like a cow took a dump.

It's ok with lots of sugar and milk & cream on top. Once a year (easter) is quite enough.

Mämmi is great with sugar & cream, I could eat it a lot more than once a year... it makes up for the fact that you can't get Malteasers here.

It was great, Conan is as funny as always, that part with a picture of naked men in sauna and Conan's comments why he's collecting these kind of pictures, men, I laughed my ass off. I saved the feed to my HD.

Sorry about this off topic thing though
