Fansy pansy restaurant lingo translation help

Well, someone asked me if I could translate these into Finnish:

: -Gateaux of Smoked Salmon and cucumber tappers?
: -Lamb confit with marinated red wine onions wrapped in filo pastry
: -Classic lemon tart with brandy snap springs.

Well... would someone be kind enough to translate them first into English please?

1. A cake of smoked salmon and cucumber telegraph sending keys?

2. filovirus infested dough that is confused if the red onions have been marinated in wine or onions in red wine?

3. I know I'll get snapping springs in my bed when a sour tart has had too much brandy :mrgreen:

Salmon and cucumber made to look like a cake -no idea what tappers are. I wouldnt be surprised if thats some sort of Salmon mousse.

: -Lamb confit with marinated red wine onions wrapped in filo pastry

lamb in a red wine and onion sauce in pastry - basically a posh pie. Confit is a way of saying preserved.

: -Classic lemon tart with brandy snap springs.

brandy snap is like a very thin crunch biscuit, ginger flavour- probably a spiral shape.

3. I goit snapping springs in my bead... I know what a tart is though :mrgreen:

Well Hank was on the right track with his reference to morse keys and tapping..
I Asked koti pomo who asked the buffet chef from The 10th floor.." She says....Cucumber tappers are pieces of cucumber cut into finger shapes, served to be used as dipping stick, or as with this classic salmond dish just as a garnish."
She suggested that it is better using celery and raw carrots cut into tappers as summer snack dipping sticks. Cucumber tends to break up before you can get the dip into your mouth.. :x makes a mess on the floor... :oops:

Me.. I am no expert.. I just eat .. but I thought that those were called Tapers...which I think are long match sticks...so could be a Finglish spelling error.
