1 cup all-purpose flour

2 cups coarse yellow cornmeal

1 tbsp white sugar

1/2 teaspoon salt

1 tablespoon baking powder

2 large eggs

1 2/3 cups whole milk

1 1/2 tablespoons vegetable oil

1/4 cup melted butter


1. Preheat oven to 180. Lightly oil a 24 cm cast-iron skillet and put it in the oven to heat up.

2. In a large bowl, sift together the flour, cornmeal, sugar, salt and baking powder. In another bowl, whisk together the eggs, milk and oil. Pour the wet ingredients over the dry ingredients, add the melted butter and the corn and stir together until just mixed.

3. Remove the hot cast-iron pan from the oven and pour into it the batter, then give the pan a smack on the countertop to even it out. Return pan to oven and bake, approximately 1 hour, until the corn bread is browned on top and a toothpick or a thin knife inserted into the top comes out clean.

IMO - an improvement:

Used Lidl 1% plain yoghurt in place of milk

50% corn meal and 50% 'Lidl sampylä flour' (3 cups total)

Think the cast iron makes diff - and the 1 hour really is needed

Keep that yogurt out of that corn bread mix!!!!!!!!!
OMG!!!!! This southerner jut had a freak out!
In the deep south we always pour Honey over the top after it comes out of the oven. After a thick smother in honey it will start to soak into the hot cornbread and you may not even want to add any butter after that!

That southern stuff sounds like a dessert. Why all the sweetness? Sure will take away a lusty corn taste.

Try without the honey, sugar and sweet stuff and give it another name and try on odd or even days of the month. :) I don't know about yoghurt but found creme fraiche a good variation on milk. The cast iron method gives a great crust.
