Sahti seems to be rather expensive 17-18€ a liter - any other possibilities? Any possibilities for availability and use of starting ingredients without the price-influence of Alko?

Instead of Dejohn investment (assume it's the narrow opening that's important) - can individual wine bottles be used?

You can use some low-bitterness dark lager. If you want to experiment for the fun of it, then just go with any dark/brown lager you find in the shop. As for the demijohn, I mentioned it because I got loads of them around, but you can use any container really. When making wine/beer, you want very controlled contact with the air so you use something with a narrow neck, but with malt vinegar that shouldn't be a problem at all. You can use pretty much any container that fits the amount you'd like to work with. As long as you can loosely cover it to prevent bugs and dirt from going inside, you're good.
Every case is unique. You can't measure the result of your application based on arbitrary anecdotes online.
