high gluton flour
is there anywhere in helsinki i can find high gluton flour? i wanted to make some bagels american style...really chewy!

I don't think you need it. I have a friend who does great bagels with just regular ingredients.

really? i tried to make them but they didnt turn out chewy it might have just been the recipe though...or my cooking i looked it up and it suggested high glutton flour..you wouldnt by any chance have the recipe your friend uses, would you?

they sound yummy! the bagels here seem to taste just like bread, no chew at all

Which flour did you use?
In GB English we call high gluten flour "strong flour" or "strong plain flour" and in Finland this would be hiivaleipäjauho (jästbrödsmjöl in Swedish). I use this flour for making bread in my machine but I have never made bagels. This flour is available in all the supermarkets. The protein content is 13g.
(BTW I don't use it for making cakes. Regular flour for cakes is erikoisvehnäjauho.)
If the regular hiivaleipäjauho is no good you could try the "spelt" version which is slightly more expensive. Not sure if the gluten content of spelt is higher but I guess you could try. I checked my cupboards and the Spelt hiivaleipäjauho has the highest protein content at 15g.

well i tried that flour you suggested but no luck they still taste like bread with a hole in the middle...now (if i find the ingredients) ill try mcowboys recipe...if nothing more this is keeping my entertained

Well, why don't y'all then ask say Sinuhe or moreover that Moroccan bakery that supplies the thick bread to prismas to do bagels - like instead of just whining? Sweet jebus on dinosaurs be glad you were not here in 1974 when a vesirinkeli was a sweetbun...

Did you try the Spelt flour? That has a high gluten content.
What kind of oven are you using. We've had discussions on this forum before about baking and one of the reasons that cakes weren't working was the problem with the ovens. Are you converting the F to Cs OK and you might need to adjust the time if using a fan oven.
