Buckskin... seems to be a term which has no well-defined simple, single meaning. I’m not sure if there’s a compact Finnish term for it or if you just need to resort to describing the type of animal/hide and the particular methods used for processing it. As for “outdoors”, it somewhat depends on the context:
ulos, ulkona, ulko-, ulkoilma- (those two last ones at the beginning of compound words, mainly referring to “outdoors” in contrast to “indoors”)
pihalle, pihalla, piha- (ditto)
erä-, retkeily-, vaellus- (commonly used when referring to outdoor activities in the wilderness: hunting, fishing, hiking, etc.)
“Age (of something)”: (jonkun/jonkin) ikä
“Set in his ways”: kangistunut kaavoihinsa, piintynyt tapoihinsa (sometimes also pinttynyt tapoihinsa), kangistunut tapoihinsa

I am actually referring to the actual tanned skin of a deer.
'outdoors" I mean generally, like "when the weather is nice, I like to be outdoors."
