Olen kiitollinen minun kissasta....or not?

Yes, kiitollinen makes the referred word take the elative.

Unrelated to that, in formal prose, you would want to add the possessive suffix to kissa, regardless of whether or not you’re also using minun (which is optional.)

Olen kiitollinen kissastani.

In a casual conversation, however, people would usually say something like:

Oon kiitollinen mun kissasta.
