That is, what one is thankful for?
I am thankful for my cat.
Olen kiitollinen minun kissasta....or not?
Thank you.
Does being thankful take elative -sta case?

Yes, kiitollinen makes the referred word take the elative.cssc wrote:That is, what one is thankful for?

Unrelated to that, in formal prose, you would want to add the possessive suffix to kissa, regardless of whether or not you’re also using minun (which is optional.)
Olen kiitollinen kissastani.
In a casual conversation, however, people would usually say something like:
Oon kiitollinen mun kissasta.
