Do the Asian stores evaporated milk or just sweetened condensed milk? I've never seen evaporated milk here, but I haven't looked for it recently.

Haven't looked for evaporated milk, but they sell both sweetened and unsweetened condensed milk.

I believe it is quite easy to make evaporated milk using powdered milk and less water than stated in the instructions.
There was a mega-thread on this a few years back.

A curious insomniac here: What is this evaporated milk used for? Is it something that ordinary milk cannot replace?

In principle it should taste the same as powdered milk, AFAIK powdered milk is made by spray drying evap... but it just doesn't.

It's rather good as a topping on fruit salads, whereas milk probably isn't. It's good in rice pudding and on porridge. Any recipe where you would use milk, this will make it richer
