Malt vinegar - new

There's a thread on where one can find malt vinegar - but the thread is 10 yers old.

So - anyone found it in 2016?

I think I saw in Stockmann's last year but it had a price that looked more like it was priced as a malt whiskey!

Iirc it has been available in Lidl when they have had those country specific weeks. So watch out if they have British one.

After several months of looking, I ended up making my own. The only sh*tty part is waiting about 5-6 weeks for it to be ready, but after that it's effing delicious!
Every case is unique. You can't measure the result of your application based on arbitrary anecdotes online.

I got 12L of Sarson's free-freight from AZ when they had their great 'over 25£' deal valid - but will run out one of these days - will keep looking.

12L should last you quite a bit :D
I'd still highly recommend starting a demijohn soonish. You'd have a whole lot of it in a month or so.

The 12L was from 2 years ago - and gave a number of bottles away.

What's the 'recipe?'

There are multiple ways to make it. I'll tell you the easy way and the not-so-easy way.

Easy way:
- Get about 11 250mm bottles of unhopped (or low-hopped beer). Low alcohol Sahti is perfect for this!
- Put the beer in a 1 gallon demijohn.
- Add a about 250ml of unpasteurized apple vinegar.
- Cover the demijohn with paper towel and a rubber band.
- Leave for 1 month under the sink. Enjoy.

Not-so-easy way:
- Get 3.4L of unhopped beer.
- Put the beer in a 1 gallon sanitized demijohn (sanitizer can be acquired from brewing stores).
- Add a piece of "vinegar mother" (can be extracted from previous patches of vinegar, or purchased online).
- Cover the demijohn with cheese cloth.
- Leave for 3 months in a dark cool environment.

I would prefer the apple vinegar method - but

I have 3L Rajamäki apple vinegar (FI) - label doesn't note if pasteurized or not - and can't say I've noticed any previous brands making note of that aspect.

Where from does one get 'unpasteurized?'

I don't believe I've ever seen "unpasteurized" used on the labels. It's usually called "organic", "unfiltered", or something like that. You usually find them in hippy places like Punnitse ja säästä or the organic section in big stores. The reason you want unpasteurized/organic/unfiltered is because you want the tiny cute bacteria called AAB (the thing that will turn the alcohol in the beer into vinegar). AAB are usually reduced or even completely killed with filtering and pasteurization processes.

Yes - understood that pasteurization will bump off the stuff we want to develop the vinegar. It was just that hadn't seen any label indications of what buggers might still be there. But am sure you are right to give some of these organic types to earn their stripes. I'll drop into one of these 'eco-oases' and get them to swear the product contains 'animal life.'

It does bring up the question of what the vegan crew thinks about these products. :)

UK price is:

Sarsons Malt Vinegar 250Ml
£0.70


Hope no one tells about freight - difficult to get above 10% when commercial quantities are involved. Usually much less. And not a question of demand - iit's a good product which should not be any problem with 'Finnish taste' - they simply haven't had it available - been the same story with all kinds of chili stuff and whatever.
