the one I eat most says: full grain rye flour, water, yeast and salt. Most popular bread has: full grain rye (crushed, flour, malt), water, wheat flour, potato flake, yeast, wheat gluten and salt. So while many might say sugar, at least my favorite and public's favorite don't have added sugar.harryc wrote:Please go down the supermarket aisle - equipped with a magnifying glass - and look at the labels on bread (INCLUDING THE SACRED RYE!!) and find that almost ALL will say SUGAR and/or SYRUP!!!

Re: Real anchovies
You don't tell what this 'public's favorite' is - ? I assume you are taalking about Vaasan RuispalatSo while many might say sugar, at least my favorite and public's favorite don't have added sugar.
If you now look at Vaasa's webpage:
http://www.vaasan.fi/tuotemerkit/vaasan-ruispalat/
They list 8 products - 4 are the Ruispalat basic recipe - the 100% having only rye - no wheat.
The other 4 all have SIRAPPI!!!!
++
I am a Ruispalat appreciator as well - but with money tight - I am going for the Reissumies at half the price. (and Fazer buys into the Sugar Addiction with their 'Tosi Tumma' - as well as juust about all their other products.)

In any case, while Ruispalat may be 'popular' - I bet 80-90% of shelf space is taken by Sugar/Syrup Breads. This would have been unheard of 20-30 years ago - maybe more people should hear the groans and moans of the Diabetes patients. It's not so much the actual amount of sugar in breads - it is the change in taste that one gets addicted to - and one becomes more dependent on having that taste in everything.
Re: Real anchovies
Oh, I didn't check any other, just the basic variety. I've tried the dark Reissumies too, waaaay too sweet for my taste.harryc wrote:They list 8 products - 4 are the Ruispalat basic recipe - the 100% having only rye - no wheat.

Re: Real anchovies
Yeah - that's the crazy thing - the sweet taste destroys the possibility of using the bread for any savory ingredients - metwursti, black-label Emmenthal, 'graavi' salmon, etc. They must have a very poor 'taste kitchen!'dark Reissumies too, waaaay too sweet for my taste.
Re: Real anchovies
Found something packed like anchovies in some K or S awhile ago. Savio brand but turned out to be a genus of sardines.
Was now in Tenerife and found what should be one of real anchovy species - from Morocco - packed by Hacendado of Spain
A nice 'extra' - packed in olive oil.
When one is looking for them - be sure to look in 'cold' parts of (super)markets

Anchovies do wonders for a pasta sauce - true umami - people who hate anchovies never know they are in the sauce!

Re: Real anchovies
Real anchovies are sold in small glass jars labeled "Sardelli" (can be found in nearly every CityMarket in the country for about 3 EUR per jar) that look like this:
Or like this:
Anything in a Finnish store that comes in a can with a label Anjovis is not anchovies. It's not even remotely close to anchovies, and not an acceptable substitute in any way. For example, stay away from this:

Yeah - tremendous 'sotku' re what's available and what are they called - and what the people selling them call them. The Jansson kiusaus 'anjovis' (pictured tin) would be a disaster if used as the real anchovy
Even a company importing from Italy has their OWN product all messed up with nomenclature.
And then - to boot - there are a number of fish species that would be candidates - some in Europe - some in Asia. And there are even sardines masquerading as anchovies in Spain (just looking like them - not using 'anchoa' name.)
Thean add that some kept cold and others room temperature.
I don't frequent City Market (rather Supermarkets9 as close CMs have cumbersome parking - Ruoholahti, Sello, Omena - but will check out sometime.
Brought back a year's supply from Canaries - will be good excuse to go back next year
(btw - is there a Latin speies name on the bottle shown above?)
