How to soften Finnish cabbage?
Any ideas?
I have no problem with the smaller cabbage, but the huge Finnish cabbage seems impossible to soften.
Tried slow cooking for 24 hours. Still hard and big - it's supposed to be reduced in size significantly after like 5 minutes!
Trying boiling with salt water now, nothing after 15 minutes. What should I do??

Are you trying to cook it whole? Try chopping it into pieces first.

Yes I opened it layer by layer.
There was some progress today - after boiling for more than 20 minutes yesterday in salt water, stored in fridge over night and then fried on a pan it was finally broken apart and softened. But not the way I expected because it's still thick, not shrunk into thin curved pieces like usual cabbage (like Korean ones).
I thought they're the same! Thanks!
Now I have to find some ways to deal with the remaining part ... still huge...

I do bake cabbage alot & with meat juices it softens nicely and reheated its supper soft.

Have you tried slicing them finely then cook with water and the cover on? Alternatively a pressure cooker works great! I had problems with Finnish potatoes too untill I could read Finnish then choose the correct potatoes for the dish. Good luck!

Thanks! But pressure cooker is rare here? Did find it on amazon the price is Someone (a Finn) told me I don't need that (or a lot of things) but I still couldn't make cabbage soft like the usual kind in Asia. haven't been able to eat any cabbage since I came.
There are different potatoes?? Can you share the terms?
PS: slicing didn't work. Finnish cabbage is very, very hard.

There are several dozen different varieties cultivated in Finland and imported stuff on top of that. So yeah, there are difference between potato and potato

I found the solution!
Freeze and unfreeze cabbage at least once, then sink in rapeseed oil and fry at mid/mid-high fire. Now it's better than chinese restaurants here
Why so many recipes told me to use olive oil when it can't sustain high temp. will not buy again.

Love it! I shred my cabbage (chop finely) and use it as a pasta replacement these days! Its ace!
