Sorry if this has been asked before, but I was really wondering what you all have for dinner, over the course of a week, home cooked food I mean - no take-aways in nowheremäki :)
I mean if you are mixed Finnish/ nonFinn family, do you make more of your homeland type food, or do you try & be really Finnish!!!!!
I just need some more inspiration for the weekly menu, BUT the only shop I can get to is SIWA! (Hubby occasionally gets Lidl or Stockmann stuff, but not that often :roll: )
We seem to live on (excuse spellings) macaronilaatikko, lihapulla, perunamuusi & kastike, anything pork (always cheap & plentiful in siwa :roll: ), stews with whatever meat/pork/poultry, & the everpresent makkara! All accompanied by usually rye bread, cucumber, tomato, & bag of mixed frozen veg!
Getting a bit dull here . Anyone recommend some good, simple but interesting Finnish cooking websites

This week we've had

pork chops baked in cider, with roast potatoes, veg and apple sauce.

Pea and parmasan risotto (very easy to make)

Last night was pork caserole. Pork pieces, onion, carrot, stock cube slowely baked and then last minute sliced bread and cheese on top baked till bubbly. Had with cabbage and boiled potatoes. Will be that tonight as well.

Also make quite a lot of

Leek and potato soup
Carrot, lentil and tomato soup
shepherds pie - with beef mince
stew and sometimes dumplings (dumplings with marg instead of suet)
Big pan with onion, mince, poatoes and veg all together like a stew
Finnish cabbage and macaroni boxes
Lasagne
Homemade pizza (easy dough, doesnt need much work)
Fajitas
Spag Bol
Homemade burgers
Curry (using paste or jar for laziness)
Toasties
Baked potatoes - cheese, homeade coleslaw, tuna mayo

I made the Finnish sausage soup for the first time last week which was pretty good.

Sometimes I might make a pie, meat and potato or chicken and leek. I just make some short crust pastry and lie it on top.

Mind is blank for now.

Last few days here
- Whitefish fillet with pistachio and boiled potatoes
- Cheese ravioli with tomato sauce
- Mozzarella-tomato salad
- Lemon risotto with shrimps
- Karelian hot pot
- Reindeer steaks with chanterelles and boiled potatoes
- Gnocchi with ground beef and sundried tomato sauce

OK. It's not a Finnish cooking site, but I really like Epicurious. Two reasons: 1) you can search tons of different ways 2) they allow reader comments and notes which are many time more insightful than the recipes themselves. Only issue might be is that all the measurements are US format but it's not hard to convert.

Lasagna is a great idea too. Ricotta can be hard to find so I use unflavored rahka and it turns out great. I don't even boil the noodles. Just run them under water a bit before baking. Pork tacos are really good too.

Awesome! Thanks everyone, will get lots of this saved, printed & posted on a wall in the kitchen somewhere (in between tots´pics & old food splodges :oops: ) for future cooking fest.........

I share a kitchen with my MIL so I cook 2x a week. It makes it easier on both of us. :D

I made this week:

vegetarian lo mein
vege bean soup
homemade mac and cheese w/ broccoli
tuna helper (from pasta ateria package..just add tuna)

I plan on making tonight:
asparagus soup
more tuna helper
baked beans w/ hotdogs
maybe a potato something.

Ethnic food is VERY important to me since I grew up with it. I'm from a varied genetic background so that explains why lol.

Wednesday is my extremely long day at school and we usually eat out. Last night when dh picked me up, he told me that he had cooked dinner. :shock: You could have knocked me over with a feather. He found a recipe, bought the ingredients, chopped a lot of veggies, cooked rice and made this lovely dish. My husband doesn't cook. That he went to so much effort and did such an excellent job has me amazed, proud and very impressed.

Tonight we had an EHTA kassleri thing that I cooked. Served with mashed potatoes and peas. The rest of the week is a blur. I think I made a stir fry, but not sure about the other days.

Karen: the best part about that photo is that the cat planning when s/he is going to get his bit. :) It reminds me of LOL cats. "I can has cheezburger"?

It's so great when the guys do the cooking.

We love the lolcats, too. I wouldn't be surprised if he selected that recipe based strictly on that cat's review. :lol:

I love this site: Je Mange la Ville. It has simple ideas, just "sparkled up a bit". Nicely presented. Who would think that meatloafcould sound so appetising. Down the right hand side it had categories to choose between....
