I was given this recipe which I really want to try. So if anyone has seen plain ribs somewhere let me know!!! I should try and get to the market sometime.
25g/1oz plain flour
1 tsp salt
1tsp ground black pepper1.6kg/3and a half lbs pork spare ribs cut into individual ribs
2tbsp sunflower oil
1 onion finely chopped
1 tbsp cornflour
for the braising liquid
1 clove garlic - crushed
1 fresh red chilli, seeded and chopped
3 tbsp tomoto puree
2tbsp chilli sauce
2tbsp red wine vinegar
pinch of ground cloves
1 pint beef stock
Preheat oven to 180cent, Gas 4
Combine flour, salt and pepper in shallow dish - add ribs and toss until evenly coated
Heat oil in lg pan and cook ribs, turning until well browned. Put in a large roasting tin with the onion
Mis the braising liquid ingredients and pour over the ribs. Cover with foil and roast for one and a half hours, or until tender. Remove the foil for the last 30 mins
Tip the juices from the roasting tin into a small pan. Mix the cornflour with a little cold water in a cup then stir the mixture into the sauce. Bring to the boil, stirring, then simmer for 2-3 mins until thickened.
