Children are fantastic at learning languages, they pick up them so easily. I know kids who have picked up several languages while living abroad with parents. I think your plan is very good, and it will definitely help your son in the future. When I was at college, we had an American exchange student who in one year picked up the language from zero so that she could easily discuss in Finnish. And I know other people as well who have learned to master the language in few years' time. As said, nothing is impossible, just ignore the resident naysayers here.
I agree with Finlandboy that it is important to consider various aspects: moving around since rural public transport is miserable, what your husband could do and how to socialise. For traveling to neighbouring countries or even exploring Helsinki you don't need to live in Helsinki, you could live in nearby towns such as Porvoo, Espoo, Kirkkonummi, Vantaa, Jarvenpaa, Hyvinkaa, Karjaa, even in Tammisaari which is lovely but mostly Swedish speaking.
Don't give up your employment hopes regarding your degree, I think your degree is promising considering that the world is changing a lot and there will be more emphasis on ecology, sustaib=nability, conservation, domestic travel etc. Consider also the private sector, setting up a business, there is quite a lot of support for that.
