Legally it is possible.
During the academic terms you are allowed to work not more than an average of 25 hours per week.
If you fail to get 45 credits per year in your studies you cannot apply for an extension of your RP.
Your wife is not allowed to work while waiting for a decision on her permit, which might take a year.
Do you have experience running a restaurant business in general?
Do you know how restaurants in Finland work and what Finnish customers expect?

Yes.
” If you have been granted a residence permit on some other grounds than entrepreneurship, you can still start a business in Finland if the main purpose of your stay in the country is some other than entrepreneurship (such as your family ties or studies). In other words, the main purpose of your stay in Finland cannot be entrepreneurship.”
