Easy, quick & tasty eggplant recipe

Ok here's a quick recipe I'd like to share - since it's super easy and quite delicious!

1) take an eggplant/aubergine and cut it into approx. 1 cm thick discs (maybe slightly thinner)
2) spread the aubergine discs over some kitchen paper and sprinkle them with some salt on both sides (kitchen paper is handy since the slices will "sweat" & the paper absorbs the liquid)... leave them so for 10-15 minutes... meanwhile you can start heating the oven -> 180 degrees
3) then you'll need some olive oil - up to 1/2 desilitres maybe
4) brush the discs with the olive oil fairly liberally on both sides, they'll easily absorb quite an amount but don't overdo it
5) spread the discs on some baking paper -> on an oven tray, then sprinkle with paprika powder and thyme.
6) bake for approx. 12-15 minutes in the preheated oven
7) enjoy with tzatziki, hoummus etc (they also go well with gigantes & fried halloumi, as shown in the pic)

Now that looks interesting.....not too long ago I had something similar, Punjabi-style fried eggplant...some sort of spicy batter....Not bad, though a little overcooked.

The "key" with eggplant is not to overcook it...which, I think, is much easy to say than to do....:D

Yep, best not to overdo the baking... I've found that approx 10 minutes in 180C is about "right", so that they're soft but still retain a bit of that -erm- almost foamy and firm texture :D

Maybe you could also deep-fry them (IIRC I've had something like that in Greece). And why not use more spices if you wish. The last time I made them I actually used Hungarian csípös paprika powder - which was almost as hot as chili! They were ok but I rather prefer the combination of aubergine, olive oil and thyme in a non-spicy form. Call it "bland" if you will but you're talking through your hat then :ochesey: (just joking, I do like spicy foods too but not everything is made better by using strong spices IMO)

Anyway there's no correct way of making these - just adjust and explore as you like - that's one of the joys of cooking :)

Good stuff - might I suggest rosemary as an option too.

Very tasty, just remember eggplant has the highest nicotine content of any edible fruit :!:

:D Yeah...according to wikipedia....9kg of eggplant to equal one cigarette... But, then eggplant is in the nightshade family, along with potatoes, tomatoes, peppers...and, hey, even petunias.... they all have some nicotine.... I think being "aware" rather than being a "purist" is the approach to take... I think most of us know that it is not a good idea to eat any parts of a potato that have turned green... Enough of it can be fatal...
