For those of us that live in the US and would enjoy making Mammi, there seems to be a bit of a stumbling block. Rye Malt Powder. Where can I get that? I can get barley malt not problem, but can't find rye.
I always find it so odd that so few people like this? It looks very similar to any chocolate mousse, but people seem to make some big deal of how it looks? Seems too childish for me to understand. Also, it is quite good and a mild pudding. Great with some cream and just a hint of sugar.
Anyone have an idea about what I can do about the rye malt? I can get rye malt that isn't a powder from a beer brewing supply store, but I don't think that is the same thing?

Seems this tradition is a lost art. Guess I will experiment and not waste my time here. I am over 40, so I can't relate, but do understand children that get caught going over the same jokes over and over forever. Kids can be dim and obviously simple.
I will try barley malt and report back incase there is a cook out there that would like to provide some tradition to their family. My child enjoys the dish as well as my wife, but we are into culture and cuisine. Interestingly that is the name of this forum section, but I digress.
I would wish everyone a happy Easter, but I am certain no one on here would understand what I was talking about. It is a beautiful time of year and maybe some on here can look it up to find out more. We will be enjoying lamb and all the Finnish favorites, but I doubt anyone would get it.

I made a batch of Mämmi and it turned out quite good and very much like what I had in Finland. It was very mild and malty. If you like Guinness beer, you may like it. I am posting this if there is someone that does a search and not really for the current members encountered here. I found this forum to be quite unfriendly and to be honest very uneducated, but there may be someone that is into history, culture and cuisine someday on here, so I will bother putting up a recipe/link/adjustments. It is odd Finnish people dislike something that is so mild in flavor. Guess Finland would be the opposite of France if you are comparing cultures. Imagine the French saying chocolate Mousse looks like poop? I don't think you would hear that in their culture, but they are quite sophisticated in comparison and take art and cuisine much more seriously. I mean no offense of course, just an obvious observation.
3 quart/3 liter warm water (maybe a little less water would be better)
Approximately 3 1/3 cups/ 750 grams rye flour (coarser is better)
2 cups/500 grams rye malt (I ground myself that I bought from a beer supply store)
½ cup/ 100 ml Sorghum- you might try something else or no sweetener if you are a purist.

Anyway, mämmi looking like poop is a common joke that people tell. Especially to poor foreigners that we insult with our simple cultural cuisine. If you don't get it then it's probably because you are just way above it. But, as you already stated, we are just an uneducated bunch of just climbed down from the trees brutes, so you have to excuse our simple jokes.

One of the things I love about the Finns is that they can laugh at their food and traditions, like us Brits have to... did you see Gordon Ramsey being interviewed on TV in Finland? I guess not
Of course it is a great time of year, snow is just about gone, flowers are coming up, sun is out, I spend my evenings happily working on the garden, rewiring the sports car and cooking sausages on the BBQ... but grumpy people are still grumpy people!

I'd guess that mämmi is like Easter eggs, available at certain time and at other times not worth the shelf space needed. And mämmi needs to be frozen to keep it good for longer times and is sold frozen or thawed, refreezing is not allowed, so once the mämmi is thawed you have to sell it in couple of weeks or throw it away.Mölkky-Fan wrote:By the way mämmi was on big sale in the supermarket yesterday... they are having some problems selling it I guess.
