Well, I've been to 4 weddings in Finland during the last 8 months and naturally a lot more in my time and I have never even heard of that tradition. So, it certainly can have happened in all the weddings you attended to but calling it a nationwide tradition or saying that it always happens is wrong. Maybe it is a local thing or something?
To the original poster, there's no need to have anything. People are more accepting of the fact nowadays that weddings are of what the couple wants. It is their day thus any cake they like and want is a good wedding cake. Instead of inviting a cousin you last saw 10 years ago and her 3 kids, it is okay to invite a dear friend in her stead etc.
