Has someone purchased a running company (lets say a restaurant) and invited some worker from abroad (outside EU) to work in it? How difficult is the process and how long does it normally take? What has been the experience like?

Estimated processing time for a residence permit on the basis of work is 2-3 months.
For being granted a residence permit, the employer must establish that there is no available labour force within a reasonable time in Finland or within the EU/EEA for the work in question.

Considering the example given was a restaurant, these requirements are easily met, f.e. Nepalese restaurant that serves Nepalese dishes would require a cook with extensive knowledge and proven track record in creating such dishes. This will by definition be a hard to fulfill job vacancy with Finnish locals (that includes Native Nepalese that are Finnish nationals or residents with a permanent permit), especially if you ad local (Nepalese local that is) specific dishes that only a few skilled persons know how to prepare. To get a Nepalese cook from another EU country to move to Finland (with his whole family), for the low wages paid in Finland, is near impossible to achieve as well. ??? The employee needs to show the employer he / she / it / them can make the dish, that will be obvious. What more proof is needed?? You would not want to hire an employee that cannot do that, that is the whole point. If you want to be sure, send a video making the dish to the employer (not Migri because it can be considered a trade secret).
