Anyone nows if I can find this meat in Finland?

Post by titaniumman » Mon Feb 11, 2008 3:21 pm

Hi everyone, I'm a cook from Spain working in Turku, and I'm trying to look for this part of the cow. Image
It's not exactly the cheek of the cow but sort of what lies beneath. It's a really good piece of meat and really tender and full of gellatine when you cook it for 3 hours. This is a very traditionally dish in Spain and it would be great if I could find it here so I can make my friends a reallly good dinner. Thanks

Is it beef jowl?
Political correctness is the belief that it's possible to pick up a turd by the clean end.

As everywhere, go to the kauppahalli, or even your local which has a butcher, and explain what you want. If they don't have it they usually can get it.
And that picture and picture of where in the cow it comes from might help...
Cheers, Hank W.

The lihamestari (or whatever the real word is in Finnish) in the Turku kauppahalli are extremely language-wise and very friendly, at least the one I dealt with last time. First tried it in Finnish along with a picture of the cow's parts and pointing at what I wanted, then he switched to English and by the time I was paying he found out that I also spoke German and replied to me in that language. I was positively flabbergasted!

Who knows, if you happen to deal with the same guy, he might even know Spanish ;-)
In any case I think the people working there know their trade, so if you bring a picture or sketch along, I'm sure they can help you.

Thanks for the quick answers. I've been a couple of times in the kauppahalli, but never saw the meat I was looking for, and I was afraid because I just started with finnish lessons. Thought they didn't speak English, but now I'll try. Thanks

If I remember correctly, me and my friend tried the very first of the big stalls (when you enter from Eerikinkatu). The guy we spoke to was maybe in his late thirties, beginning fourties (though not sure if this info will help you). Well, anyway, even if you don't find the linguistic talent that served us, I'm sure that if you have a picture/sketch along, also the monolingual Finnish lihamestarit there will be able to help you.
