How to make Kotikalja?

Post by serkank » Thu Oct 15, 2009 7:04 pm

Hi All,

I tried to search through the archives but cannot found an answer. How do you make kotikalja? I bought a small pack from super market but it's in Finnish so I cannot really understand how to make, what's the way you are doing it? Also do you prefer to use that or do it yourself?

Thanks...

Serkan

I recall an old thread about the topic. It was quite informative, IIRC. Couldn't find it either :(

What I didn't know is that you can make wine at home as well - tasted last Sunday, can't wait to try myself. But let's not change subjects, it's way to early to derail this thread :)

Edit: found it viewtopic.php?f=12&t=9710&start=0

3 dl sugar
4 1/2 dl rye malt.
4-5 l water
1 table spoon baking yeast

Put malt and sugar in a bucket. Boil water and pour it in the
bucket. Let the mixture cool down and drain filter it. Dissolve yeast in
a bit of lukewarm Kotikalja and add it to the kotikalja (must not be too hot otherwise the yeast dies!).
Leave the bucket until next day in room temperature (20 C). Cool down the drink.
Kotikalja stays drinkable 3-4 days stored in closed bucket or bottles in a cold place.
