Good Recipe for Rudolph?

Hey everybody!
Anyone got a good recipe for poro/reindeer? I'm thinking more specifically of the poro that is served up in little bits (NOT ground, just chopped up & mutilated), and usually put on mashed potatoes. Got no problem with the mashed potatoes part, just the meaty-meat.

PORONKÄRISTYS

500-600g jäistä poron paistia (frozen) tai lapaa (shoulder?) tai valmista poronkäristyslihaa (prepared)
100g siankylkeä (pig fat/bacon) tai voita
noin 2 dl vettä
5 maustepippuria
noin 1 tl suolaa
mustapippuria

Vuole paisti ohuiksi lastuiksi terävällä veitsellä. Pakasteena myytävä poronkäristysliha on valmiiksi paloiteltua. Leikkaa silava ohuiksi suikaleiksi ja anna sen ruskistua kuumassa padassa. Ruskista poronlihalastut rasvassa.

Lisää pataan vettä vähän kerrallaan sekä maustepippurit ja jaka hauduttamista 1/2 - 1 tunnin ajan. Mausta käristys suolalla ja mustapippurilla.

Tarjoa poronkäristys perunasoseen ja puolukkasurvoksen kanssa. Poronkäristyksen nesteeksi sopii myös olut.

The recipe doesn't mention adding onions and mushrooms as the picture and the caption suggest but you really can't add too many mushrooms and onions to a good meat stew :) The restaurant "Lappi" serves this and it's awfully tasty.

Recipe is from Kotiruoka, a sort of classic 'joy of cooking' in Finland.

Basically, meat stew doesn't need a "recipe" but what Eashton gave is pretty much on the spot. OK, meat - don't buy the ready made stuff, its really horrendous at times. What you want is a nice chunk, if frozen the better. The next part is to slice it. I use a regular knife, but as I am sure Arabella is not on the menu, be damned careful (and use a glove to keep the meat in place). Having hot water at hand and dipping it in now and then to see the meat might help some. Now chopping up done, there is butter, the pork (stripped up similarily) and a preferrably cast iron pan to do the trick.

Its about the same way I do a 'karjalanpaisti', I prefer the thin slices. Though then 'karjalanpaisti' is clear I sometimes just dump in the veggies and potatoes and do it the Irish stew -way so basically anything goes. Have done with mutton a few times.

One 'käristys' version we had at work was done from ostrich and it was quite tasty, so I guess me making some from turkey wasn't a too whacky idea.

The thing is with different meats the original taste & spicing is a bit different.

And as a final note - be damn careful carving up that meat.

Hey guys, thanks for the recipes! I tried with the frozen stuff before I decided to ask people for the recipe, I guess that's why the end result was kinda bland. Oh, and the lack of fat probably didn't help the tastiness either. But next time I make it, I'll be sure to use some big 'ol gloves and cut in some bacon/reindeer fat as well...

The frozen stuff there is the problem if its put on the pan frozen or thawed, makles a whole difference.

OK this recipe is from Norway and has been a favorite in our family (Norwegian mum) for years. It is best with a decent hunk of venison, but I've tried it with Elk before. It tasted good, but the meat was a bit tough.

Take a decent sized hunk of venison.
Fry it off in a pot with some capers to seal it. (Salt & Pepper)
Add a pot of sour cream and stir it in to the juices (The more cream --> the more gravy :) )
The special ingrediant is Norwegian goats cheese. I have bought it here in Finland and usually comes in a small brown package and is call Geitost (There may also be Gudbrandals on the back too) It looks like fudge and has roughly the same consistency as it is not what you would call a real cheese (It is made by cooking the goats milk down until it becomes brown and solid - stay with me!! :wink: )
Slice it up and add plenty to the sauce. Taste it and when you have a rich, sweet creamy sauce, turn down the hob, and pot roast the joint for an hour or two.
Serve with potatoes, peas and some cranberry jam.
It makes the grated over salty reindeer and mash look very dull!!

Oven? blashemy! it goes out for few months and is dried on cold weather :)
