I bought some Christmas herring at the Herring Market on the Kauppa Tori in October (November?). It is pickled with some wonderful Christmas spices. Really good.

Well as far as I know there is still a fish market on the tori. They probably sell herring and could give you some advice. And there is probably home-made herring for sale in ALL the Christmas markets (like the one on Esplanadi).

You really want to make it yourself? Isn't it a bit late? I thought pickles were best made a week or two in advance....

You could also try Hakaniemi market hall for the fillets.
