Could be cultural misunderstanding, ham what you put on your bread is different than christmas ham
We just call it ham because we do, it shouldnt be like ordinary ham what you buy from shop so seems you did it perfectly.

When buying ham in the shop how can i tell if the kinkku is pork-like or more like a salted pink meat ham like ham is in Ireland or England, or is it all pot luck.

yeah, so it is like "ass of pig" and when its done in one way its christmas-ass-of-pig and when its done for sandwiches its boiled-ass-of-pig and then you can have smoked-ass-of-pig... or what do you think "kinkku" means?
