Prunes - recipe
Prunes - recipe
On Monday I went out for a meal in town with colleagues and for dessert we were served (delicious) prunes marinated in booze??? with a light dollop of cream. I was told this was a Swedish dessert called Katharina's plommar ???? or something like that. I have tried to search for Swedish prune recipes on the net but haven't found anything similar to the dish we had. Any ideas? Can I just marinate some pitted prunes in cognac/brandy/port whatever or do I need to heat them up? Anyone got a traditional recipe for a Christmassy dessert?
Re: Prunes - recipe
search for "marinated prunes" and you'll get many suggestions.
Re: Prunes - recipe
Thanks for the enlightening suggestion rinso, but I was hoping someone had a traditional Finnish Christmassy "homemade" recipe they could share.

In one of my Scandinavian cooking books, prunes in red whine are mentioned. This is however a quite international recipe.
But here it goes:
400 - 500 g dried prunes (soaked overnight in hot water
2 dl sugar
lemon rind
cinnamon (1 bar)
4 tbsp butter
5 dl red wine
let those 5 ingredient simmer for 10 minutes
add the prunes (without water)
simmer for 30 minutes till the prunes are soft

This is an old Christmas recipe that goes for figs and/or prunes (I don´t know if it is the same, I have never heard that it would have a name):
Cook dried figs/prunes is water + lemon juice + cloves + a cinnamon stick. Cook till they are soft. Take the fruit out and put them into jars. Heat cognac till it is 50° and pour it to the water/lemon juice/spices cooking water. Pour the mixture over the fruit (spices too). Keep the jars in cold. Serve with whipped cream.

Thanks all. Both sound good. I'll try them out. I always hated prunes but the ones I had on Monday were FAB (and no er... side effects afterwards).
