Buying Rosvopaisti (to cook)
I've found a finnish foodstuff (well, i think it's finnish) that is absolutely heavenly - Rosvopaisti.
It's basically a big block of smoked and salted pork, with fat on top, that you cook in an oven (you can fry slices of it, but trust me, it's best when cooked in the oven, for 1.5 hours at 175 degrees, with the fat part on top so that it melts and runs through the meat and it tenderises it... and oh god now i'm hungry...).
Unfortunately, the only place where i've been able to find it is the S-Market under Sokos - and the basts there only stock it once every two months or so.
You can find sliced and prepared Rosvopaisti in most other S-Market stores, but those aren't as tasty as when you cook it yourself.
Apparently the good Rosvopaisti is marketted under the "Chef Wotkins" brand, but only in S-Market - maybe someone knows of Rosvopaisti made under different brands in other stores ?

I've never seen it for sale.
The only version I've seen is where you make a fire in a pit, then stuff the meat in, cover over with soil and leave it to cook for half a day.

Ah well, then i'll have to resign to occasional luck when visiting that S-Market.

I thought you are confusing it with christmas ham...
For me "bandit roast" is a lamb, or any meat cooked in the pit. And this is why when the bandits stole a sheep or poached a deer they made the fire over it so when someone came by there was no evidence, just some men by a fire...

Oh yeah, and that the product itself is delicious.
Also, it doesn't seem to be seasonal - i've been able to find it about 4-5 times last year, about one or two months apart - i think maybe it's just not very popular, so they don't bother to stock it that often.

Got one of those classic recipes for rosvopaisti.
It starts with:
"one steals a sheep"

In some places (mostly countryside) you can order it for a special occasion.

Just pop in and ask Mr Wotkins for some more. He hangs out in Sörnäinen, a stone´s throw from Heino. Nice factory shop there, 3 minute walking distance from (IIRC) Kalasatama metro station.

I read today in Yhteishyvä 2/09, the HOK-Elanto group magazine, that Chef Wotkins
is going to open in March a butcher counter in Prisma Itäkeskus, apparently with daily supply of products
and some of the Wotkins staff to serve customers.
