Dunno if this helps at all or is of any value but here's an indication of the price for some of the veg you mentioned (and some extra) in my local shop (Valintatalo). I think Valintatalo is a tad pricey mind. This is in Turku...I am guessing that prices in Turku / Tampere are quite similiar compared to Helsinki / Tampere.

Luxxnatura, you'll be fine, but be prepared for a lack of economic options in winter. You'll have to spend a bit more for worse stuff than you'd get back home. Nothing much to add in terms of practical recommendations, apart from the asian food shops. There's one near Finlayson that occasionally sells the cheap veg (loads of chillies for 1€, weird and wonderful greens, etc), but most ethnic shops here don't sell veg.
Are you going to be a student? If so, uni cafeterias always have a veggie option, and should in theory have a vegan one too. It's cheap, nutritious and filling, and occasionally nice as well. The veggie cafes and restaurants are decent, for Finland: veganissimo is alright, but pricey outside lunchtime, Gopal is good, Telakka does great felafal (the last one isn't a veggie place, but it's full of hippies
), but if you want to eat in a 'normal' place be prepared to get rubbish, expensive food. Although sometimes you'll be pleasantly surprised.

I have the impression that Tampere is a very vegan friendly town (by Finnish standards) - a lot of "alternative" people living there. The Vegan Society contact person for Tampere will be able to give you more information: tampere (at) vegaaniliitto.fi.
Generally, Finland is big on big supermarket chains so you will have no trouble finding enough proteins or even exotic vegetables fruits in the chain stores. Prices are another issue as are climate protection considerations... Lentils, tofu etc are usually cheaper in shops like Punnitse & Säästä, or "ethnic" shops.
