Sourdough bread making

Hi, does anyone in the forum make sourdough bread? If so, could you tell me which flour brand you use? I hear it's meant to be unbleached, but I couldn't find anything on the major brands about the flour being 'valkaisematon'.

Hello Mr fatherXmas,
I bake sourdough bread on a daily basis and I use the Myllärin Hiivaleipävehnäjauho (http://www.helsinginmylly.fi/kotitaloud ... 0&mag_nr=2 , the second one). Careful, HIIVA does nit mean that the flour contains yeast, it just mean that it is an adequate flour to use for bread baking due to its high protein content.
It is a good flour, but it does require a slightly higher hydration % than when using other flours.

You can also use "puolikarkea vehnajauho" of any brand and Lidl has white strong bread flour. And of course you can mix flours, that;s what I usually do!
