I think the only Finnish crockery company is Arabia these days

At mucho Euro PER PIECE what restaurant is going to be able to afford those?

One possibility for 'cutlery' is Hackmann's Savonia - but they're damn expensive too and can't sensibly be used where slipping a fork into a pocket comes to 50% of the cost of the meal sold.

btw - has everyone noticed that Hackmann, Iitala, Fiskars and Arabia are all part of the same corporate pie these days?

not a physical shop but http://www.metos.fi/metos.htm supply a lot of Finnish restaurants.

The only thing close that I've seen is Lasi-Koiso in Tampere, and I think they're going out of business. Or maybe it's just a remodel? It's difficult to tell with these loppumyynnit! Anyway, most of the store was dedicated to home chefs and I always got the feeling that they weren't too keen on selling the professional equipment to individuals. (Semi-related, is it legal to sell from a wholesaler directly to a non-commercial customer in Finland?)

There's also Chez Marius, which is probably different than what you're looking for, but maybe as good as you're going to do. At least they have pans without non-stick coatings.

In the admittedly few professional kitchens I've been in the equipment was Metos, the knives were Victorinox, a few things like AL pots and cutting boards were pro-grade and everything else was commercially available to the consumer.

Yes. But if you sell to consumers then there are consumer protection laws... all manuals in Finnish/Swedish, guarantees/liability, etc.

Seriously doubt if someone that has been able to wrangle a 'deal' is going to start notifying the 'authorities' that they didn't get a manual in Finnish, etc.
