My Humus recipe

Here's how I make humus. I basically asked a Greek guy I knew what the ingredients were, then played with the quantities. He said there were 2 different kinds of tahini (yellow and green) that will give you a slightly different flavour.

If you have any variations, post it up with some info about where you got it from.

Mix these together first.
0.5 DL lemon juice.
1 teaspoon of fresh crushed garlic or 2 teaspoons of dried ground garlic powder.
0.5 teaspoon salt.
1 or 2 tablespoons of olive oil.
2 or 3 tablespoons of cold water.

Then mash with...
1 tin of chick peas (400g / 265g net weight) -- You should drain and rinse the chick peas.
2 tablespoons of tahini paste.
(add more water if it is still too thick for your liking)

When it's mixed to the consistency you want, seal in tupperware put in the fridge for about an hour before eating. It tastes even better if you can wait the next day.

Store in fridge. It will keep for about to a week.
