After a bit of study, I get why this:

Luulin, että siinä menisi enemmän aikaa.

equals this:

I thought it would take more time.

But why was this:
I don't know what to do."

translated thus:
En tiedä mitä tekisin.” (http://www.lonweb.org/daisy/ds-finnish-lorna.htm)

Silly me- I would have just used 'tehdä'

First, I think that you can also say En tiedä, mitä tehdä. But there may be a slight difference of meaning from En tiedä, mitä tekisin.

Second, you can compare En tiedä, mitä tekisin with English I don't know what I could do: even though it is less idiomatic to say this in English, it has more or less the same meaning as I don't know what to do.
