Well that's the end of that enthusiasm!
Regulations kill business and therefore options for consumers. Hopefully this new government can address this.

Yup. I'd be willing to waive all that regulation for a price that businesses were fully liable for any and all cost that has resulted from their lack of hygiene and all the other things that are such highly regulated. I have known the exact rules and regulations. Establish your own business first (Private trader or limited company, private is the simplest.), And then apply for food health inspection, the trailer is quite clean and all the required facilities are available, No any problem for food health inspection. The cost for the business is extremely low. The trailer can be used forever, no further inspection needed. In Helsinki City center there 14 places you can have this kind of business, all the allowed selling places are in very good location, includes the place in front of the central railway station, all the square market places, and other places in the heart of the city. Outside the city center you can do the business in a lot of places, the only rule is that you do not disturb traffic of cars and people. In Espoo, you can also do the business in 6 places. the cost is very very low.
You can get your investment back within 10-15 days back after you know how do run this business and work hard.

There are very good sales on this kind of activities due too a lot of people in this kind public activities. All information is available for it.

Most of those festivals license the catering to one contractor (often including the alko sales). If you want in, you have to buy yourself in as a sub-contractor.There are a lot of festivals and open market sells in every city of the whole Finland every month.
Being involved in one of those festivals, I know it's a risky business if you only sell food and no alcohol.
