Mexican Fiesta Night

Anyone interested in having a Mexican food night, where everyone brings their own favorites as well exchange recipes and tips. Have a real almost authentic mexican fiesta, with Mole and guacamole to tamales or enchiladas.

Ive been using my Tortilla press and Ive got the corn tortilla thing down. Im interested in sharing fish tacos baja style, well almost maybe los angelino style ;)

I am provided some conditions are met:
permission from ma SO ( 1st things first)
Driving less than 100 KM one way(You can easily get trapped with this thinggy and find out that this ge3t together is in Rovaniemi and I have to drive from Inkoo..)
Its during Summer..Much better timing
Its during a Weekend...More and better chance!!
and I can prepare either of the 2:
Migas ( provided i find some corn tortillas) OR
Breakfast Burrito ingredients - scrambled eggs, potatoes, tomatoes, salsa, ground beef/chorizo, 3-cheese blend but substituted with mozerella, cheddar-slices, and some other I dunno what -
one who wants makes the burrito)
and Ne habla espanol

Well Im in the Helsinki Area, but am flexible to the location where this happening could be held, I can provide as many white corn tortillas as are required as well as homemade flour tortillas, Many here on the board have talked about mexican food, I figured it would be great to plan and do it. Yes definately Weekends would be better for me as well. We might have to wait this cold spell out a bit as well.

I definately would be interested in experiencing a breakfast burrito, its been a while since Ive had one.

Me!

The second Saturday of every month is no good for me, but weekends in general are definitely best. Not sure what I could bring. My brother is arriving a week from Saturday, I might ask for some dreaded Velveeta. It's not on my regular wish list, but it's been ages since I've had chili con Velveeta.

Depending on the number of cooks, maybe we could do it at my place. I could cram about 6 cooks in here comfortably, and a few more non-cooks. No matter where we have it, my dh and kid will have to come with.

Is Margarita mix available here? I have a couple of bottles of Tequila that need to be consumed. Oh, but sangria would be awesome and I have lots of red wine.

Btw, my dh told me last night that someone was suing Kraft Foods because their guacamole was only 2% avocado. (Maybe this is old news?)

I'd love to come - especially to Karen's house since I know she's close and there's ample parking :)

I make a killer fresh salsa from a recipe I got from a nanny who was taking care of us school girls in Guadalajara, mexico. Of course, it'd be better if I had some tomatillos... :)

Well, ummm... I used to know how to do huevos rancheros, but I think I can still do a (half-indecent) margarita as well, so you can decide if you want to let me in the kitchen or not :lol: And I am good in deciphering shopping lists for substitutes ;)

Ok we have some interested people, and a tentative place thanks to Tadpole's Mommy, so now a time in Mid March, How does March 18 set for everyone. That way we can plan more and prepare some wonderful food with a Mexican flair. Of course other favorites are welcome as well. Maybe during that time there will be a sale on pork and I can make carnitas(of course thats a wish). If not I got Frijoles

Most of my items can be prepared earlier so they just need to be heated and served

OK everyone interested can list what they'd like to bring and Ill list them all in the next reply

Hmmh, I was thinking about whipping up some horchata this weekend
to see if I can still make it from scratch (instead of from a bag :lol:).

And Xochi, that would be the first one on that list ;) If you guys want
torture though, I can bring about 20+ Chayanne cds and torture
the daylights out of y'all with another Puerto Rican former boyband
member's music ;) (Ok, I wouldn't consider it torture <3 :lol:)

I was thinking about bringing euchepos, but I'm not sure I could get
the proper ingredients at this time of year *sniff*.

March 18 should be OK for me..But I will check with ma SO to make sure that we are free!!.
TM: We have a lightweight portable electric range, if you need more cooking ranges.
We got it from Hongkong for about 25 Euros and it served ma mom's purpose of cookin!!
How about pots n pans? Who is bringing what? or should we pre-cook the food N bring it there to assemble? :wink:
and one more thing: I dont "wanna no-one to" :wink: confuse Indian cooking thinggy with TexMex!!
