I took some English sausages to a recent Finnish BBQ (brought back in a freezer bag in my suitcase
)and the Finnish host said when he had first tried them in the UK he wasn't so sure about the texture as they were so meaty, but after a few trips he now wishes he could get them here in Finland, maybe a lot of Finns would like them too they just aren't available here so unless you've travelled you just think all sausages would be the Kabanossi type, yuk. I miss English bangers, the kind you can have when making sausage and mash and onion gravy, or toad in the hole etc. you can't do that with these frankfurter type pretenders!

I'll take the opportunity to advertise Austrian sausages spotted in Stockmann's deli the other day: "Grillparty" (4 different bbq-sausages, my favourite is the one with "pus" i.e. with cheese inside and wrapped into bacon):
This is what the package looks like, a bit pricey they are though, about 5 Euro if I remember correctly. But very good!

I just picked up some hog casings and some sheep casings from Chef Wotkins factory outlet in helsinki. about 3.50 for 7 meters of casing. They also had some great meat there. They hang their meat for about 5 weeks, and you can really tell the difference. We have made some susage from it and so far I am quite pleased.

Were the sheep casings the same price as the hog casings? If so, that's a good price.
Are they natural ones? Are they in brine or just wrapped in plastic? I have never got them from Wotkins.
We got some merguez from the Halal butcher in Leppavaara last Friday and he told us he is selling over 100kgs every weekend... so someone is buying "real" sausage! They are great value for money compared to the merguez being sold in Wanha Kauppahalli, CM and Stockmann.
We also bought some of West Chark sausages in Pohja (near Fiskars) last week. It is a really small factory and they have their own recipes (like the local Billnäs sausage). There's a factory shop and sometimes they can be found in the S-Market over the road. Never seen them in Helsinki though.

The were fresh. apperently they just make them new each day. One of the fellows there said they butcher about 50 carcasses a day at the factory there and so they always have a supply. The sheep was the same price as the hog, They come with a bit of plastic stuffed in the center to keep it seperated. They are very good quality. I actually just got done making some Italian spicy sausage about an hour ago. Good stuff!
